Minimer

The new hotspot in Vesterbro is a salad bar and eatery with the admirable mission of minimizing (minimer means to minimize in Danish) food waste. 
Minimer makes delicious and healthy food based on three core values. They utilize ingredients that, due to aesthetic requirements or overproduction, are discarded.

They make sure that ingredients are fully utilized – peels, sticks, leaves, and so on.
 It’s an incredibly thoughtful approach to food-making, and luckily, the food is absolutely delicious. 
The space itself is hyggeligt; be sure to pay Minimer a visit immediately!
